I’m new to crypto & Trezor suite so when I use it I see that the transaction fee is 7% of the entire Bitcoin purchase through the exchanges Trezor works with.
Is there a way to circumvent the high fee or a setting I need to toy with on Trezor suite?

Buy somewhere else. Look at Strike or gemini active trader.
Set the fee to 1 sat/vB
changenow.io is a cheap exchange.. if you use ethereum you can also buy at matcha.xyz or Uniswap
If you feel even more confident you can go to tradeogre.com which is an oldschool decentralized marketplace
